This is a very simple recipe that I found in Good Housekeeping mag and then slightly modified.
Ingredients:
1lb of frozen strawberries, slightly thawed.
1/2 cup sugar
1/2 tsp vanilla extract
1 cup plain Greek yogurt (I only used three 5.3 oz containers)
Step 1: Blend 1 cup of strawberries in a food processor. It helps if the strawberries are slightly thawed, which I didn't do at first but highly recommend.
Step 2: Transfer berries to a large metal bowl.
Step 3: In food processor, puree yogurt, sugar and vanilla.
Step 4: Add remaining (slightly thawed) strawberries.
Step 5: Transfer to bowl with strawberries; stir well till blended.
Step 6: Freeze for one hour until firm. This time may vary depending on freezer temperatures. Mine took about two hours and I stirred it every 45 minutes.
Step 7: Enjoy!
It really is quite delicious and much more healthy than regular ice cream.
